Ok, a few problems. First, I missed my mash temp by a few degrees. I hit 158, and then added some cold water to bring it back down to 151 in about 2 minutes. I forgot to add the 5.2 ph stablilizer until about 15 minutes into the mash. I’m sure that was a big problem. So, to help make up for that, I collected 8 gallons of wort, and did a 90 minute boil. I calculated my boiloff incorrectly, and ended up with a little under 6 gallons instead of my predicted 6.5. When I took my gravity reading, it was still 1.052, a few points shy of my target 1.058. But, it does taste really good, so I remain optimistic.
